What does Henny Penny E-12 mean?

E-12 is specific to Henny Penny pressure fryers equipped with an FPS (Fat Polarity Sensor) probe. The FPS monitors oil quality by measuring electrical properties of the cooking oil; when the control detects the probe is faulty or sending an out-of-range signal, it displays E-12 and alerts the operator. The FPS system is separate from the main temperature probe and solely tracks oil condition.

Symptoms

• Display shows E-12 and an audible alarm sounds.
• FPS oil-quality reading is absent or erratic on the control display.
• Error persists after power cycling the fryer.
• Oil quality data cannot be retrieved from the control.

Common causes

• FPS probe element has failed or degraded internally.
• FPS probe connector is loose, corroded, or separated from the harness.
• FPS probe cable damaged by heat or cleaning chemicals.
• Control board input circuit for the FPS probe has failed.
• Probe contaminated with heavy carbonized oil residue affecting its electrical response.

Diagnostic steps

   Power cycle the fryer

   Turn the power switch OFF, wait 10 seconds, then turn back ON. If E-12 clears, monitor for recurrence; a single occurrence after a cleaning cycle may indicate a transient moisture issue.

   Inspect the FPS probe connector

   Locate the FPS probe connector — typically a separate connector from the main temperature probe harness — and verify it is fully seated. Unplug and re-seat, checking for bent or corroded pins.

   Clean the FPS probe

   Remove the FPS probe from the vat and clean the probe tip with a soft cloth to remove carbon buildup or oil residue that may be corrupting its electrical reading.

   Inspect the FPS probe cable

   Trace the probe cable for heat damage, kinks, or pinch points. Replace the cable assembly if insulation is cracked or conductors are exposed.

   Replace the FPS probe

   If the error persists after cleaning and connector inspection, replace the FPS probe with the Henny Penny-specified replacement part for your PFG or 4-head model.

When to call a professional

If probe replacement does not clear E-12, the control board's FPS input circuit requires testing by a licensed technician. FPS-equipped pressure fryers also involve pressurized cooking vessels; any internal service on these units must be performed by trained personnel familiar with pressure fryer safety procedures.
