What does Perfect Fry SECONDARY OVERTEMP mean?

This PFA-series SYSTEM ERROR means the cooking oil level is too low or the cooking oil has overheated. The fryer beeps twice, displays the alert, and de-energizes the heating element while the fans run. The oil level must be corrected between the hot and cold lines and the overtemp reset before the fryer will heat normally again.
